Creamy Pasta & Salmon

Today is Mother’s Day!! It’s a special Sunday when we all say, ‘Thank you,’ to the women who raised us. Italian food is a personal favourite that compliments a good conversation on special occasions like this one. Here’s Ms Tholoana Jane’s delicious Creamy Pasta & Salmon recipe that is easy to make and is packed with Omega 3 fatty acids.


You will need:

Pasta of your choice

Salmon

Onion, chopped

Mushroom, chopped

Olive oil

Freshly squeezed lemon juice

Mushroom sauce

Butter

Milk

Fresh parsley, chopped

Salt & Pepper


Cooking Instructions:

Pasta:

In a large pot, boil water and add olive oil and salt.

Add pasta and cook until al dente, then drain the water.

In a skillet, place a block of butter and let it melt. Add the chopped mushroom and onion and sauté on low heat.

In a cup, mix mushroom sauce and milk and then pour the mixture into the skillet.

Add salt and pepper to taste and stir consistently until the mixture thickens.

Salmon:

Dry your salmon and rub salt and pepper on it.

In a cup, mix the freshly squeezed lemon juice and olive oil, and use it to glaze the salmon.

Line an air-fryer with foil then place the salmon such that the skin is at the bottom. Air-fry until cooked.

Serve the salmon on a bed of your now-ready creamy pasta and garnish with freshly chopped parsley. Pair with your favourite white wine or rosé.
